How To Use Palate Profiles
Palate profiles are an alternative method by which a wine can be described. This method is used frequently used by Rosemount Estate winemakers to visually depict the nature of a wine and to illustrate the differences that exist between wines of the same variety, grown in different vineyards or regions.
The idea is simple and highly effective - to communicate a wine’s front, middle and back palate visually instead of verbally. To describe the wine being tasted, draw a graph showing the intensity and texture of the wine from the moment it enters your mouth through to the finish.
How do you draw a palate profile?
- Start by drawing the framework for the palate profile graph. This consists of a vertical axis for intensity and a horizontal axis for the front, mid and back palate, as seen below.
- Taste the wine and plot the palate profile graph. As you taste a wine, draw the chronological impact and sensation of the wine, showing:
Initial impact, or front palate.
As it fills the mouth, or mid-palate.
As you spit, or back palate.
The aftertaste, or finish.
