1. Combine lime dipping sauce ingredients in a bowl and season with freshly ground black pepper. Cover with plastic wrap and refrigerate until ready to use.

  2. Heat a barbeque grill plate until hot. Place whole prawns on grill plate and cook for approximately 3 minutes each side. This will vary depending upon the size of the prawns. When cooked the prawn shell will change in colour from green and translucent, to orange with charred grill marks.

  3. Serve straight from the barbeque with the lime dipping sauce and plenty of lime wedges. The prawns pair beautifully with a chilled bottle of Rosemount pairing with a seasonal variant.
