1. Heat oil in a large pan and cook onion and garlic for 2 minutes. Add mince and cook for 5 minutes until well browned, then add the dried or fresh Italian herbs.

  2. Add the sugo, tomato paste and cherry tomatoes and stir well to combine. Bring to the boil then reduce heat and simmer for 5 minutes stirring occasionally. Add the basil and sugar then season with freshly ground pepper and salt to taste.

  3. Meanwhile, cook pasta in a large pot of boiling salted water for 10 minutes or until al dente, then drain.

  4. Toss bolognese sauce with drained pasta and serve with grated parmesan and a bottle of Meal Matchers Cabernet Merlot.
